I was so excited to discover frozen passion fruit puree cubes in the supermarket freezer; this delicious and flavorful fruit is sometimes difficult to find and is usually quite expensive. I knew I wanted to create something special for Yom Tov with it. This airy and exquisite-tasting mousse cup is elegant and easy at the same time, perfect for a Yom Tov dessert! Ingredients

Fruit Layer

  • 6 tablespoons pareve whipping cream

Vanilla Mousse Layer

  • 1 16-ounce (450-gram) container pareve whipping cream, minus 6 tablespoons for the fruit layer

  • 2 tablespoons + 1 teaspoon Gefen Instant Vanilla Pudding mix

  • 1 tablespoon sugar

Garnish

  • 2–3 cubes passion fruit puree, defrosted, or 3 long lemon wafers, cut into sticks, or pulp from a fresh passion fruit

Directions

For the Fruit Layer

1.

In a mixer, beat pareve whipping cream until stiff. Set aside.

2.

In a food processor fitted with the S blade, puree the passion fruit cubes, pears, and honey until smooth.

3.

Remove six tablespoons whipped topping from the mixing bowl and add to the fruit puree; divide mixture evenly among dessert cups.

For the Vanilla Mousse

1.

Add vanilla pudding mix, sugar, egg, and lime juice to the beaten whipping cream in the mixing bowl and beat on low speed until everything is incorporated.

2.

Spoon mousse mixture into a piping bag or a ziplock and cut off the tip; pipe over the fruit puree in the dessert cups in a spiral motion. Place in the freezer until serving.

For the Garnish

1.

Remove from the freezer 10 minutes before you’re ready to serve. Garnish with defrosted passion fruit puree, cut wafer sticks, or passion fruit pulp.

Delicious and really light! I substituted the pear with pineapple and it was divine!!

I can’t get Passion fruit cubes. How many Passion fruits per cube?

Passionfruits are pretty small… I’d assume about one fruit per cube, or one fruit per 2 cubes.
