Caution: Do not make these cookies if you are fleishig. Otherwise you will be craving a glass of milk for the next six hours. Trust me, I know!
2 sticks softened margarine (use soy-free, if needed)
1 cup granulated sugar
3/4 cup packed light brown sugar
2 large eggs
1 tablespoon Gefen Pure Vanilla Extract
1 and 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon Haddar Kosher Salt
1 and 1/2 cups Glicks Chocolate Chips
1 cup Gefen Cocoa Powder
1/2 cup granulated sugar
1 egg
1 tablespoon vanilla sugar
Place peanut butter and sugar into a medium bowl and mix to combine. Add the egg and vanilla sugar, mixing until well combined. Set aside.
In the bowl of an electric mixer, beat the margarine and sugars until well combined. Add eggs and vanilla and beat well. Add flour, baking soda, and salt, slowly mixing until just combined. Fold in chocolate chips.
Preheat oven to 350°F.
Roll a 1-inch ball of the peanut butter mixture. Working with damp hands, flatten some fudge cookie dough around the peanut butter ball. Place on greased cookie sheet. Repeat until there is no filling left.
Bake for 16-17 minutes, until cooked through. Let cool on baking sheet for 5 minutes before transferring to a cooling rack.

I added the cocoa together with the flour. I only used about half a cup, didnt want the dough to be dry
And baking time was 13-14 minutes max
thank you for the recipe! theyre great!
yum!
i put in 3/4 cup oil instead of margarine and it came out delicious.
The cookies were delicious! I lowered the temp to 325 as I found that the bottom of the cookies were burning at 350 and the cookies came out softer.
The recipe calls for 1 Tbsp of vanilla extract. I assume it’s a mistake and really meant to be 1 teaspoon.
peanut butter and choc heaven! Absolutely delicious!! and quite easy to do, you just flatten a bit of choc mixture with damp hands, and roll it around the peanut butter ball…. yummy!!
Disappointing I was actually pretty disappointed by this recipe, I made it for shabbos and was not happy with it. The dough was really messy and hard to deal with. I tried putting it in the fridge to see if it would firm up and be more manageable but no luck. The whole deal was time consuming, especially on a friday. So although the cookies were good they were definitely not notable enough to make it worth the patchka.
Thanks for the feedback. That’s really disappointing. Odd that the fridge didn’t’ firm it up. Very frustrating.
peanut butter stuffed fudge cookies Soooooo good!
I always wish I could make these without eating the entire batch.
