1 cup fresh blueberries
1/2 cup peaches
1/2 cup strawberries
1/2 cup Tuscanini Balsamic Vinegar
1/4 cup Gefen Honey
3 tablespoons Heaven & Earth Ketchup
2 cloves garlic
6 dark meat chicken cutlets
salt, to taste
Place all ingredients, except chicken, in a pot and cook over a low flame until all the fruit is very soft. Watch the pot, as the berries are prone to scorching the bottom if the flame is too high.
Remove from heat and let cool. Blend mixture using an immersion blender.
Turn up grill to medium high and place cutlets on grill. Sprinkle salt on cutlets and leave on grill for three minutes. Flip over and repeat with other side.
Once the second side is mostly cooked, brush peach berry barbecue sauce on cutlets and flip over. Allow to grill for one minute. Brush other side and flip over to cook for another minute.
Cutlets should come off grill easily when thoroughly cooked.
Place cutlets in pan and cover with foil to ensure that the inside of the cutlets are fully cooked.
