Passover Pancake Mix (Gluten Free)

Ingredients

Pancake Mix

  • 1 and 3/4 cups Gefen Almond Flour

  • 2 tablespoons tapioca starch

  • 1/4 cup coconut flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1 tablespoon sugar

For Pancakes

  • 1 cup pancake mix

  • 1/2 cup milk (I’ve only tried with regular milk but likely dairy free options would work too)

  • 2 eggs

  • 1 teaspoon vanilla

  • 1 teaspoon cinnamon

Directions

For the Pancake Mix

To make the pancake mix, just mix the ingredients to incorporate them.

For the Pancake Mix

Yields 2 and 1/2 cups

For Pancakes

1.

Mix pancake mix, milk, eggs, vanilla, and cinnamon.

Heat a lightly oiled frying pan over medium-high heat. Pour batter into the pan, using approximately two tablespoons for each pancake. Brown on both sides, adding whatever toppings you’d like prior to flipping and serve hot.
