Mounded mashed potatoes present so elegantly in these compact mounds. The combo of potatoes and sautéed onions is one of our favorites!
2 large onions, diced (or use 2 cups Haddar Sauteed Onions and skip to step 2)
4 potatoes, cooked and well mashed
3 eggs, beaten
2 teaspoons salt
1/8 teaspoon pepper (optional)
Sauté onion in liberal amount of oil.
Combine all ingredients and mix until smooth.
Form into balls or scoop and place onto cookie sheets.
Brush with egg.
Bake at 350 degrees for 20-30 minutes.

yum! really enjoyed this over pesach… I made it in my betty crocker….
making this not for pesach, should I use flour? corn starch? how much should I use?
I think you should be able to use 1 cup of flour instead.
