Easy to prepare – no eggs to separate – and great tasting gluten free coffee cake muffins, perfect for Passover snacking or any time of year.
2 eggs
1 cup sugar
1/2 cup oil
1/2 cup orange juice (I used freshly squeezed)
2 cups Gefen Almond Flour
1 cup Gefen Potato Starch
2 teaspoons Gefen Vanilla (optional)
2 teaspoons lemon juice
1/2 cup sugar
2 tablespoons cinnamon
1/4 cup Gefen Almond Flour
1/4 cup sugar
1/4 cup Gefen Potato Starch
1/2 teaspoon cinnamon
1 tablespoon oil
Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
Beat together the eggs and sugar until very pale yellow.
Add remaining ingredients except sugar and cinnamon mixture, and mix until just combined. Don’t overmix.
In a separate bowl, combine topping ingredients with a fork or gently with your fingers.
Fill muffin cups one-third of the way.
Sprinkle with sugar and cinnamon and mix. Fill the muffin cups the rest of the way with batter. Sprinkle topping evenly over the tops.
Place in oven and bake for 15 to 18 minutes.
Yields 2 dozen

Sugar is listed twice in muffin ingredient list but there’s no coffee? What’s the correct version of this recipe?
@judith levy coffee cake means cake that you eat with coffee 🙂
recipe i think something is wrong with the printing of this recipe. the ingredients are all mixed together the muffins and the topping and you dont know which is which.
I am so sorry to hear that! We will take a look at it and try to fix it! Sometimes it is easier to copy and paste the ingredients and instructions into a word document and print from there.
Add baking powder? These muffins look a little flat. Can I add a teaspoon of baking powder or would that ruin the recipe?
I’ve never tried it but I don’t see why it would ruin the recipe. Let us know how it works out!
It’s not clear what the 1/2 c sugar which is listed as the last ingredient is for. If it’s to be combined with the cinammon which is listed first, the instructions should have said so. Please clarify
Would you say this is ok to make into a cake? Or would it be too dense?
It seems like these are likely to be very heavy and certainly not rise at all.
I wish you had a gebrochts recipe including some matzoh cake meal and perhaps some baking soda.
After 54 years of making Streits Coffee Cake mix every year, none is available in greater Los Angeles this year. So I’m reduced to making a quite complex recipe.

The cinnamon and sugar mixture consists of what? 2 tablespoons cinnamon and a 1/2 cup sugar?

It says Passover coffee cake muffins but there is no COFFEE mentioned in the ingredients
Coffee cake is actually just a sugar and cinnamon cake with topping, it doesn’t actually have coffee in it 🙂

It just states 2 Tbs cinnamon
Sugar and cinnamon mixture is just mixing sugar and cinnamon together. You can do a 2:1 ratio. More sugar than cinnamon.
Delicious! I added some baking powder so it rose higher than the picture. I also layered the batter & cin/sugar mixture rather than swirling it. Came out absolutely delicious!!!! would make year round!
