This easy crumble recipe sandwiches passionfruit filling between a layer of buttery dough and oatmeal topping. For a crumble bar recipe using jam and that repurposes the dough as the topping, try our Czechoslovakian Pastry Bars.
Yield 24
1 cup margarine (2 sticks)
3/4 cup sugar
pinch of salt
2 cups flour
16 ounces (1 pound) passionfruit filling
1 cup old fashioned oats
3/4 cup flour
1/2 cup dark brown sugar, not brownulated
3/4 stick margarine, cut in chunks
Line a nine- by 12-inch baking pan with Gefen Easy Baking Parchment Paper. Preheat oven to 350 degrees Fahrenheit.
In the bowl of a mixer fitted with a paddle attachment, beat margarine and sugar together for about three minutes until fluffy.
Add salt and flour. Beat until dough comes together. Press dough evenly into prepared pan.
Spread passionfruit filling from edge to edge.
In the bowl of the mixer, combine oats, flour, and sugar. Add margarine and mix just until it forms large crumbs. Sprinkle over evenly over top of pan.
Bake for 45 minutes, until top is golden.
Remove pan from oven and cool for 10 minutes. Cut into thirds lengthwise. Then cut each strip into eight bars. Cool completely and remove from pan.
Store at room temperature for one week or freeze in an airtight container.

You can use frozen passionfruit (there are some kosher brands- Beleaves for one). Cook down over low heat with some sugar and water.Â
