Make the Rice
Heat oil in a medium-size frying pan.
Add onion. Sauté until tender. Add rice; stir well. Cook, stirring constantly, for two minutes.
Add water, juice, and raisins. Bring to a boil, cover, reduce heat, and simmer for 20 minutes or until the rice is tender and the liquid is absorbed.
Add salt and pepper; toss lightly.

Yummy This rice is definitely on the sweet side, so if that's not your thing you might not like it, but I liked it. I forgot to buy raisins so I had to make it without them, and it was fine, but I'd like to try it again to see if the raisins add another dimension of flavor to the dish.
