This easy one-pot pasta dish is light and delicious. Feel free to add a grilled piece of salmon or skip the cheese and add a piece of grilled chicken or steak. It’s so versatile and yummy!
1 box of your favorite pasta, such as Tuscanini
2 tablespoons Tuscanini Olive Oil
1 medium sweet onion, thinly sliced
3 cloves of minced garlic or 3 cubes Gefen Frozen Garlic
1 cup cherry tomatoes, sliced in half
1 cup frozen petite peas
4 and 1/2 cups of water
2 teaspoons kosher salt
pepper, to taste
1 chicken flavor stock cube
3 packed cups of baby spinach
1 cup of freshly grated Parmesan cheese
On a medium low flame, heat olive oil add onions and sauté for five minutes just to soften.
Add garlic and cook additional four minutes stirring occasionally.
Add water, soup cube, tomatos, peas, salt and pepper and bring to a boil.
Once water has reached a boil add pasta and spinach.
Cook until pasta is Al-dente or your desired cook-time.
