Okeydoke Salad

Ingredients

Salad

  • 8 ounces Italian blend salad

  • 1/2 small red onion, cut into thin rings

  • 1/2 cup diced cantaloupe

  • 1/2 cup fresh string beans, cut into diagonal slices

  • 1/2 cup fine chow mein noodles

Dressing

  • 1/4 teaspoon dried oregano 

  • 1/4 teaspoon black pepper

Directions

Prepare Salad

1.

Blend all dressing ingredients together until well combined and slightly thickened.

In a large salad bowl, place all salad ingredients except for chow mein noodles and mix together. Pour dressing over salad prior to serving and toss gently to coat. Top with chow mein noodles. 

Notes:

If red wine vinegar is too strong a flavor for your taste buds, just substitute regular white vinegar.
