Don’t raise those eyebrows — you read it right! Yes! Cantaloupe adds a superb flavoring to this fun and tasty salad. The combination of veggies, the hint of raspberry flavoring, and the red wine vinegar bring it all together in your next “salad of the season.”
8 ounces Italian blend salad
1/2 small red onion, cut into thin rings
1/2 cup diced cantaloupe
1/2 cup fresh string beans, cut into diagonal slices
1/2 cup fine chow mein noodles
1/2 cup oil
1/3 cup Kedem Red Wine Vinegar or other red wine vinegar
1/2 cup Tuscanini Raspberry Jam
3 teaspoons Haddar Dijon Mustard
1/4 teaspoon dried oregano
1/4 teaspoon black pepper
Blend all dressing ingredients together until well combined and slightly thickened.
In a large salad bowl, place all salad ingredients except for chow mein noodles and mix together. Pour dressing over salad prior to serving and toss gently to coat. Top with chow mein noodles.
