1/3 cup raisins
3/4 cup rolled oats
3 tablespoons toasted wheat germ (or substitute 3 extra tablespoons flour)
1/2 cup whole wheat flour
1/4 cup all purpose flour
1/2 teaspoon Haddar Baking Powder
1/4 teaspoon salt
3/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/3 cup plus 2 tablespoons packed brown sugar
1/2 cup orange juice
1/2 cup milk, soy milk or buttermilk
1 teaspoon Gefen Vanilla Extract
2 eggs, beaten lightly
1/4 cup Gefen Applesauce or apple butter
2 tablespoons oil
Preheat oven to 400 degrees Fahrenheit. Cover the raisins with hot or boiling water and set aside.
Mix together the oats, wheat germ, flours, baking powder, salt, baking soda, and cinnamon. Stir in the sugar. Add the orange juice, milk, vanilla, eggs, applesauce, and oil. Stir until just combined.
Drain the raisins, add to the mix, and stir briefly. Divide the batter among 12 paper-lined cases.
Bake for 15 to 20 minutes, until the muffins spring back when gently pressed.
Yields 12 muffins
