These are like oatmeal cookies in the shape of a muffin! No yeast, no eggs, no sugar and low-fat for the allergic and health conscious.
1 cup oat flour (made by grinding rolled oats in food processor)
2 teaspoons baking powder
1/2 teaspoon salt
1 cup parve milk (e.g. coconut milk, rice milk, soy milk, etc.)
2 tablespoons olive oil or Gefen Canola Oil
1 tablespoon Gefen Honey
1/2 cup raisins, chocolate chips, chopped nuts or a combination
Combine dry ingredients in a bowl. In a separate bowl, mix parve milk, oil, and honey.
Add liquid mixture to dry ingredients, stirring until well combined. Add raisins, nuts, and/or chocolate chips and stir again until well mixed.
Fill 12 muffin cups two-thirds full with batter (it will be thick).
Bake for 10 minutes.
Preheat oven to 450 degrees Fahrenheit.
Yields 12 muffins

Me Is the batter supposed to be thick when I am put it in to the cupcake holders?
Spelt? Can I substitute spelt flour for whole wheat or it will change the texture?
Yes, you can!
It bothers me when the ingredient in the title isn’t in the recipe. They should be called Oat flour (not oatmeal) muffins. I don’t want to grind my oatmeal into flour, I want to bake with oats/ oatmeal as the name suggests.
I added 1/4 cup of sugar free applesauce and some liquid stevia. Also put in a handful of blueberries. They were absolutely delicious if you can’t eat things like bobka and cinnamon rolls! They are really good with a cup of coffiee or tea. We do love them but they are not gourmet.

Something is off I wanted to give these muffins a go, but once I started adding in the ingredients, something just seemed off. Theres only 1 tablespoon of honey for the entire recipe. I tried the batter before baking and it was disgusting. I added in 1/4 sugar, baked and still utterly inedible. These probably could have been great, but could be that the editor forgot to mention a few other ingredients. Bakers beware.
