If you have lots of dates still in your pantry from Rosh Hashanah, there are tons and tons of ways to use them. I love them on their own as a sweet. I use them in energy balls. I use them in cholent and in apple crisp. I have Medjool dates in my pantry all year, and here’s another place to enjoy them.
1/2 to 1 cup oat milk
1 cup frozen cubed mango, such as Beleaves
1 small banana
1 tablespoon Gefen Lemon Juice
2 pitted Medjool dates
flesh from a passion fruit
fresh cubed mango and/or banana
Blend all ingredients. If you’re enjoying in a bowl with a spoon, use toward the lower amount of oat milk. If you’re enjoying in a cup with a straw, use the full amount. You can freeze the mixture and take single servings out to thaw to an icy consistency a couple of hours before.
