Quick and easy to make (no mixer) — yummy AND healthy! Yield: 12 muffins
Glicks Cooking Spray (optional)
2 and 1/4 cups oat bran hot cereal, uncooked (gluten-free, if needed))
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup parve milk, such as Gefen Oat Milk (or skim milk)
2 eggs, slightly beaten
1/3 cup Manischewitz Honey
2 tablespoons oil
1/4 cup raisins or blueberries (optional)
Preheat oven to 425 degrees Fahrenheit. Line 12 medium-size muffin cups with paper cupcake holders or spray bottoms with cooking spray.
Combine dry ingredients in a bowl; mix well.
In a separate bowl, combine milk of choice, eggs, honey, and oil.
Mix together with dry ingredients, adding raisins or blueberries, if desired. Do not overmix.
Fill prepared muffin cups three-fourths full. Bake 15 to 17 minutes or until golden brown.
