The small amount of work involved in this recipe does not do justice to the impressive outcome! Yields: 2 loaves biscotti
1 cup sugar
1 cup brown sugar
1 cup oil, such as Gefen Canola Oil
2 eggs
3 cups Glicks Flour
2 teaspoons vanilla sugar
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons Gefen Chocolate Pudding Mix
1/3 cup chocolate chips
Preheat oven to 350 degrees Fahrenheit.
In a medium-sized mixing bowl, mix sugars and oil. Stir in the eggs.
In a small bowl, combine flour, vanilla sugar, baking soda, and salt. Add dry mixture to the wet mixture and mix well.
Remove one cup of dough and place in a separate bowl. Add pudding mix and mix until incorporated.
Stir chocolate chips into the lighter dough.
Remove half of the lighter dough and form two 2×12-inch loaves on a lined baking sheet, spread apart. Split the darker dough in half and spread over the two loaves. Cover the darker layer with remaining lighter dough.
Bake for 20–25 minutes.

They were delicious! Though I would have loved the “brownie” layer to be more noticeable… it just came out looking like chocolate chip sticks
