Cheesecake is a delicious indulgance all year round, but is most connected with the holiday of Shavuot, when many Jewish folks celebrate by preparing dairy meals. 7 ounces (200 grams) Kedem Tea Biscuits (original or chocolate-flavored)
3 and 1/2 ounces (100 grams), or 1 stick/1/2 cup less 2 tablespoons, butter, melted
7.4 ounces (210 grams), or 1 cup less 1 tablespoon, 25% fat cream cheese
5 tablespoons powdered sugar
1 teaspoon Gefen Vanilla Extract
2 teaspoons vanilla instant pudding
8.4 ounces (250 milliliters), or 1 cup, whipping cream
3 and 1/2 ounces (100 grams) Elite 70% Dark Chocolate
4.25 ounces (125 milliliters), or 1/2 cup, whipping cream
Elite White or milk chocolate, shaved
In a food processor with a steel blade, grind the biscuits into a thin powder.
Add melted butter and process into a crumbly mixture.
Press the crumbs into the base and on the sides of a greased 24-centimeter (nine- and- a- half-inch) springform pan to form a crust.
Cool the crust in the freezer for about 10 minutes.
In a mixer bowl, whip together cheese, powdered sugar, vanilla extract, instant pudding and whipping cream until you get a smooth and firm cream.
Pour the cream into the base and level the top. Cool in the refrigerator for at least an hour to set.
Break the chocolate into squares and put in a bowl.
Add whipping cream and melt together in a microwave or on a Bain-Marie until everything is melted and the mixture is smooth.
Pour the coating over the cheese layer and straighten the top.
Cool for half an hour in the refrigerator until the coating sets.
Decorate with chocolate.

BUT, the cheese part came out very low.

Very yummy and rich cheesecake I made this recipe for shavuos and loved it! It was so chocolaty and cheesy and creamy, just perfect. The only thing is that the cheese part came out much lower than the picture looks. I would maybe double the cheese center so that there’s some hight. As well as the topping I made from milchig chocolate, it was great.

no-bake chocolate cheesecake I made this yesterday and it was delish! I actually did the filling a bit different-I whipped up the whip with the sugar, then added the instant pudding and vanilla extract and then the cream cheese. Though next time I’d rather make it in individual portions as it was too runny even straight from the freezer. Oh, and I made the ganache with dairy chocolate! Yum!!
