6 eggs, separated
1 and 1/2 cups sugar
1/8 teaspoon salt
1/3 cup water
1 teaspoon Heaven & Earth Lemon Juice
2 teaspoons vanilla sugar or Gefen Vanilla Extract
1 and 1/2 cups flour
1 teaspoon Haddar Baking Powder
Beat egg whites, gradually adding sugar and beating until stiff.
Slowly add yolks, salt, water, lemon juice and vanilla.
Fold in flour and baking powder.
Pour into nine-inch tube pan. Bake for 45 minutes.
Preheat oven to 350 degrees Fahrenheit.

I added the juice and rind of 1/4 orange and 1/2 lemon, to equal about 1/4 cup total. The flavor was exactly as I remember my mother’s cakes. This cake was a little more dense than Mom’s …but almost perfect. Great recipe.
