If nachos and guacamole are your favorites, then go ahead and try this one. You won’t be disappointed. Even the picky hubby licked his plate clean. (He was taste testing, of course.)
4 sticks string cheese
1/2 cup Mishpacha Flour
1 egg, beaten
1 cup crushed Caesar salad croutons (or Gefen Cornflake Crumbs)
oil, for frying
1 bag or 1 head romaine lettuce, shredded
2 plum tomatoes, diced, or 1/2 box cherry tomatoes, halved
1 red onion, sliced thinly
2 cups tortilla chips, crushed
1 avocado, diced
4 ounces cream cheese
4 ounces mild salsa (or hot and spicy, if you prefer)
2 teaspoons water
Cut string cheese into one-inch cubes. Dredge in flour, then egg, then crumbs. Freeze for one hour.
To assemble salad, add lettuce, tomatoes, onion, tortilla chips, and avocado to a large salad bowl.
To make dressing, combine cream cheese, salsa, and water. Thin with additional water, if needed. Pour dressing over salad.
Fry cheese croutons in two inches of hot oil for two minutes per side. Add to salad. Serve immediately.
