This salad is all about variety and what you have on hand – it’s so easy to swap ingredients. The key is this incredible beet juice dressing that brings it to the next level.
spinach (or kale)
quinoa
green cabbage
roasted squash (or sweet potato)
mango
beets
avocado
blueberries
candied pecans (or pumpkin seeds)
chopped fresh mint
goat cheese (optional)
1/2 cup Tuscanini Extra Virgin Olive Oil
juice of 1 lemon
2 tablespoons beet juice
2 tablespoons Heaven & Earth Date Syrup
2 tablespoons zaatar
1–2 cloves garlic, minced or 1-2 cubes Gefen Frozen Garlic
freshly ground Gefen Pepper
salt
Combine all salad ingredients in a bowl. I haven’t provided specific amounts – use whatever you like and whatever you have on hand.
Mix all dressing ingredients and top salad with dressing. Enjoy!
