3 large onions, chopped
6 stalks celery, chopped
1 red pepper, chopped
1 pound mushrooms
oil for sautéing
2 mushroom soup cubes
2 cups water
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon black pepper
Sauté onions, add celery, red pepper and mushrooms.
Cook until soft, about one and a half hours. Remove two cups of this mixture, blend and pour back into pot.
Add flour, water and spices.
Cook for additional 15–20 minutes or until desired texture is obtained.

Can I replace the flour with cornstarch?
Hi Chaya,
Yes you can. You may need to make some adjustments since it’s not a perfect replacement. Cornstarch is twice as thick so I would use about half and stir it in some water beforehand to make a slurry. Adjust as needed.
