Marinated Mushroom Salad

For all of those mushroom lovers out there, this is THE ONE!! Aside from its fabulous range of color, the perfectly seasoned vegetables are positively addictive!

Ingredients

Salad

  • 8 ounces (225 grams) baby bella mushrooms, thickly sliced

  • 8 ounces (225 grams) button mushrooms, thickly sliced

  • 6 mini orange peppers, thickly sliced

  • 10 pieces whole baby corn, thickly sliced

  • 1/2 small red onion, sliced into thin half-rounds

Dressing

  • 1/4 cup oil

  • 1/4 cup distilled vinegar

  • 3 tablespoons sugar

  • 1 teaspoon salt

Directions

For the Salad

1.

Combine all salad ingredients in a large mixing bowl.

2.

In a separate bowl, mix together dressing ingredients until well blended. Pour over vegetables and toss to coat.

3.

Refrigerate and allow to marinate minimum 3 hours. Serve chilled.

Can I mk the marinated mushroom salad a couple days in advance ? Can I mk the marinated mushroom salad 2 days in advance and store in container?

substitute for parsley cube Can I substitute dried parsley flakes for the parsley cube?

Yes Batsheva! About a teaspoon dried should be great.

Prepare mushrooms How should i prepare the mushrooms? Do i chop off the stems? How about the brown fuzzy stuff?

There shouldn’t be tons of fuzzy stuff on baby bellas. Stems are fine to eat.

Thank you Chaia, and I was meaning to ask on the regular mushrooms too, and they do have lots of brown stuff. Do i need to remove it or is it ok to eat?

So washing mushrooms is a no-no. I take a paper towel and make it slightly damp and rub off any dirt on the mushrooms.
