2 red peppers, cut into strips
1 green pepper, cut into strips
1 orange pepper, cut into strips
1 yellow pepper, cut into strips
6 carrots, thinly sliced
6 kirbies, thinly sliced with peels
2 large red onions, sliced
1 onions, sliced
1 and 1/4 cup vinegar
1 cup sugar
1 cup water
4 teaspoons salt
1/4 cup oil
1/4 teaspoon white pepper
In a 2 quart pot, combine vinegar, water and oil and bring to a boil. Add sugar and spices, and mix well.
Pour over prepared vegetables. Marinate in tightly closed jar for 24 hours prior to use.
