This slushie is my go-to whenever hosting on a hot summer night. It is the perfect accompaniment to a barbecue dinner and is great on its own as well. If you make these mojitos often enough you may find yourself with some friends who invite themselves over for a chill night again and again! (I’ve got a few of those.) This drink can be enjoyed by kids too—just omit the rum!
1 cup sugar
1 cup water
8 cups ice
1/2 cup rum
1/2 cup fresh lime juice (from about 4 limes)
zest of 2 limes
6 to 8 mint leaves, plus additional for garnish
additional lime wedges, for garnish
Bring water and sugar to a boil in a small saucepan and mix until sugar is dissolved. Set aside to cool.
Add ice to a blender, followed by remaining ingredients. Blend until smooth. Pour into individual cups and garnish with a sprig of mint and lime wedges.
