Learn how to prepare delicious, moist low-fat wheat bran muffins, perfect for a breakfast on the go or a midmorning boost.
1 cup unprocessed wheat bran
1 and 1/2 cups whole wheat flour
1/2 cup raisins
1 teaspoon Haddar Baking Powder
1 teaspoon baking soda
1 cup milk or substitute
1/2 cup Gefen Honey
3/4 cup Haddar Applesauce or other plain applesauce
1/4 cup chopped nuts
2 tablespoons olive or canola oil
2 eggs, beaten
Line a 12-cup muffin tin. Preheat oven to 350 degrees Fahrenheit.
Place all ingredients, one at a time, into a large mixing bowl, mixing well by hand after each addition.
Spoon batter into prepared muffin pan and bake at 350 degrees Fahrenheit for 20 minutes or until inserted toothpick comes out clean.
Yields 12 muffins
