Mock crab and fried rice are a perfect lunch or light dinner. I love fried rice because it’s a whole meal in one single pan. This dish becomes even more delicious if it sits in the refrigerator for a couple of days! I hope you will give this recipe a try!

Ingredients

Main ingredients

  • 1 cup of raw Basmati rice, cooked according to package directions

  • 5 tbsp olive oil

  • 3 cloves of minced garlic

  • 1 tsp minced ginger

  • 1 cup of shelled edamame

  • 2 beaten eggs

  • 8 mock crab sticks, sliced

  • 6 scallions sliced

  • 6 tbsp of soy sauce, divided

  • 2 tbsp honey

  • 1 tbsp sriracha

Directions

Prepare the Fried Rice

1.

In a large frying pan add oil, garlic and ginger. Slowly heat it up until very fragrant and starting to brown.

Add cooked rice, edamame, 4 Tbsp of soy sauce and honey. Allow to cook for five minutes stirring occasionally.

3.

Add egg and mix until egg is fully cooked.

Add the mock crab and the rest of the soy sauce, Sriracha and little salt and pepper. Cook for an additional four minutes, stirring occasionally.

5.

Stir in the scallions.

6.

Prior to serving, squeeze on some fresh lime.

Tips:

Make sure to take care to not over cook the rice this will avoid a mushy mess. Next day rice is probably the best. Try a whole grain rice for a healthier version. Don’t like spice? No worries, skip the sriracha. Like very spicy, add all the sriracha you like:) When seasoning with salt just be mindful that soy sauce is quite salty. When plating, add some avocado and freshly squeezed lime to take this dish to the next level!!!
