Ingredients

Main ingredients

  • 1 egg

  • 1/2 cup plus 2 tablespoons and 1 and 1/4 teaspoons (130 grams) sugar

  • 2 and 1/2 tablespoons plus 1/4 teaspoon (35 grams) sunflower oil

  • 2 teaspoons (8 grams) Gefen Baking Powder

  • 3/4 cup (180 grams) water

  • 1 and 1/2 cups (180 grams) flour

  • whole raspberries and/or blueberries

Directions

Prepare the Muffins

1.

Add all ingredients to the bowl of a stand mixer. Mix on low-medium speed to combine.

2.

Pour into muffin papers. Place three to four berries into each cup.

3.

Bake for 15 minutes at 350 degrees Fahrenheit (180 degrees Celsius).

Notes:

Per the recommendation of the OU, raspberries must be inspected individually over a white cloth or lightbox. If insects are found, none of the berries in the container may be used.

Prepare the Muffins

Yields 12 muffins.

Mixed Berry Muffins Could you please confirm how many eggs ? In the video, I can see two but in the recipe only one. Please advise.

Mixed Berry Muffins Can you use frozen blueberries/strawberries?

Can you double the recipie? ( asking because the amounts are so exact.)

If you are using frozen fruit, I would defrost it first and make sure it’s not too soggy. NO reason to not double the recipe.

Sunflower oil Looks great! I’ve never used sunflower oil before. Is the flavor of the oil a key ingredient in this recipe or can I sub with another oil?

Great question. You can use any neutral flavored oil. Canola, avocado…
