Delicious mini meatballs in a Hawaiian-inspired sauce. In Hawaii we make the meatballs with BBQ sauce and pineapple chunks(sometimes with red pepper as well). I love a red meat sauce so this is kind of my version of the two! My family is crazy about these meatballs and they couldn’t be easier to make! I like to serve this dish with rice or mashed potatoes.
2 to 2 and 1/2 pounds ground beef
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, crushed or grated, or 2 cubes Gefen Frozen Garlic (optional)
1 and 1/2 cups Gefen Marinara Sauce (1/2 a jar)
1/2 cup Gefen BBQ Sauce
1 tablespoon brown sugar
2 teaspoons Glicks Soy Sauce (or gluten-free soy sauce if needed)
2 teaspoons vinegar
1/4 cup pineapple juice
1/2 cup Glicks Pineapple Chunks
Add all sauce ingredients to a skillet or deep pan and whisk to combine (I do this directly in the pan). Add pineapple chunks.
In a bowl, add ground beef and season with spices. Mix well to combine.
Shape the mixture into meatballs, each using about a tablespoon of meat. Try to keep them all the same size so they cook evenly.
Arrange the mini meatballs on top of the sauce. Place the pan over medium heat and bring to a boil. Once boiling, lower the heat, cover the pan, and cook for 15 to 20 minutes, depending on how deep of a skillet you use- a deeper skillet will need 20 minutes to cook the sauce to the right thickness.
Uncover the pan, turn the meatballs, and cook another five to seven minutes. Enjoy hot.

This was excellent. Next time I would add some breadcrumbs and eggs to the meat to make it softer.
