- EggEasy-to-prepare flourless cauliflower-mushroom kugels. Elegant and light, these are a welcome addition to your festive table.
2 cloves garlic, crushed, or 2 cubes Gefen Frozen Garlic
2 onions, diced
4 mushrooms, diced
1 (16-ounce) bag frozen cauliflower florets, defrosted
1 whole egg plus 1 egg white or 3 tablespoons Haddar Egg Whites
2 teaspoons avocado mayonnaise or light mayonnaise (sugar-free, if desired)
Tuscanini Sea Salt, to taste
black pepper, to taste
Chop any large cauliflower florets smaller. Sauté garlic, onions, and cauliflower.
Preheat oven to 350 degrees Fahrenheit.
Mix together with eggs, avocado mayo, and seasonings.
Spray a muffin pan with olive oil cooking spray and scoop batter inside. Bake for 40 minutes.
Yields 8 to 10 large mini kugels
