These mini cookie cuties are bakery style classics.
3/4 pound margarine
1 tablespoon Gefen Vanilla Sugar
1 packet instant vanilla pudding
2 and 1/2 cups flour
1 teaspoon baking powder
Tuscanini Strawberry Fruit Spread or other strawberry jam
8 ounces baking chocolate, melted
Cream margarine and sugars until fluffy.
Add pudding, flour, and baking powder. Mix to form soft dough. Refrigerate for one and a half hours.
Form into balls the size of a nickel. Bake at 350 degrees Fahrenheit for 10 to 12 minutes.
Divide cookies in half. Spread jam on flat side of half the cookies and top with remaining half.
Dip each sandwich cookie halfway in chocolate.
