1/2 cup oil (canola oil, vegetable oil, or melted coconut oil)
1 generous cup granulated sugar
3/4 cup Gefen Cocoa Powder
1/4 teaspoon salt
2 teaspoons vanilla extract
2 eggs
1/2 cup Glicks Flour
3/4 cup chocolate chunks or Glicks Chocolate Chips
Preheat oven to 350 degrees Fahrenheit. Using a baking spray that contains flour, spray mini muffin tins (large enough to fit about two dozen mini muffins) to grease well.
In a large, microwave-safe bowl, combine oil, sugar, cocoa powder, and salt. Microwave 30 to 45 seconds, or until mixture is warm/hot. Stir until smooth.
Mix in vanilla extract and then the eggs, one at a time.
Stir in the flour gently. Mix in chocolate chips last.
Roll dough into medium-large balls. Press into the prepared tins, flattening tops.
Bake about 11 to 13 minutes, or until a toothpick inserted into the center of a brownie cup comes out with gooey crumbs. Toothpick should NOT be clean.
Let brownies cool and harden before running a knife along the edges to ease them out of the pans.
Top with a simple chocolate glaze, if desired.

I’m not sure how they were mean to be served but they would definitely be delicious warmed 🙂
