Surprise your family and serve these adorable bite-sized cakes for your next special occasion.

Ingredients

Mini Bundt Cakes

  • 1 teaspoon pure vanilla extract

  • 6 ounces semisweet chocolate bar or 1 cup semisweet chocolate chips, such as Glicks

  • powdered sugar

Directions

1.

Preheat oven to 350 degrees Fahrenheit. Spray a mini Bundt pan or a mini cupcake pan.

2.

In a medium bowl, blend cake mix, pudding, water, 1/2 cup oil, eggs and vanilla with an electric mixer. Pour into the mini cups until halfway full. Bake for about 20 minutes until done. Check by inserting a toothpick into the cake, and if it comes out clean it is done. Let cool.

3.

Prepare a cookie sheet lined with Gefen Parchment Paper.

4.

Melt the chocolate with one tablespoon oil over a low flame in a small double boiler pot or a glass bowl set on top of a pot filled with 2 inches of water. Stir until smooth.

5.

Carefully dip the bottom of each Bundt into the melted chocolate and let any extra chocolate drip off. Place the Bundt on the cookie sheet to set. Sprinkle with powdered sugar. Freezes well.
