Every sweet item baked in my house in the summer will have a fruit in it. I never get bored of making fruit-filled goodies! These mini muffins are no exception. Just pop one or 10!
Yield: approximately 45 mini muffins
1 cup oil
1 cup sugar
2 eggs
1 cup orange juice
2 teaspoons Gefen Vanilla
4 cups Glicks Flour
2 teaspoons baking powder
1 pint fresh blueberries (or equivalent frozen)
1/2 cup oil
1 cup sugar
3/4 cup Glicks Flour
Preheat oven to 350 degrees Fahrenheit.
In a bowl, mix together the oil, sugar, eggs, orange juice, and vanilla. Add flour and baking powder. The batter will be very thick.
Gently fold in the blueberries.
Pour batter into mini muffin tins (I used a cookie scoop).
In a bowl, mix together crumb ingredients (crumbs will seem very wet). Crumble over muffins.
Bake for 15 minutes.

Faigy said after 20 min they should be good but to check them because they may need more time.
hey i have a question when i want to use those brown paper for muffins where you put in the batter do you bake it with those paper or you only put the muffin later in there? thanks

you put the muffin cups in the muffin tins add the batter and bake them like that.
