Ingredients

Middle Eastern shakshuka

  • olive oil

  • 2 eggs

  • 1/2 cup diced onions

  • pepper

  • 1/2 cup of diced mushrooms

  • salt

  • paprika powder

  • 1/2 cup of diced pepper

  • curry

  • 1/2 cup diced courgette

  • cumin

  • full cup diced tomatoes

  • parsley

  • 250 grams pasata sauce

  • 1 garlic clove

Directions

Prepare the Shakshuka

1.

Bring greased pan ( with olive oil) to medium high heat.

2.

Sauté onions,courgettes, mushrooms, peppers and garlic clove together with salt, pepper, paprika powder, cumin and curry for about 6-9 minutes.

3.

Once sautéed, add tomatoes and pasata sauce.

4.

Make two openings in the pasata for the eggs.

5.

Once the eggs are in the pan, cover with lid or plate until fully cooked.

6.

Add parsley and more salt to finish off.
