I love the little twist on classic shakshuka here using vodka sauce and Parmesan cheese instead of the usual tomato and feta. Of course the fresh herbs are optional, but I highly recommend them for a burst of freshness if you have access to them.
In this article, I shared some really delicious and comforting meals you can make using only one appliance to cook and heat like a microwave or Betty Crocker Pizza Maker. You can also make this in a toaster oven tray. Directions for each appliance are included below.
4 large eggs
2 cups Tonnelli Vodka Sauce
1 tablespoon parsley (or basil), cleaned and finely chopped, for garnish (optional)
grated Parmesan, for garnish
sourdough bread, such as Heaven & Earth or pita, to serve
Pour sauce into a microwave-safe dish like a nine-inch glass pie pan.
Microwave the sauce for eight minutes.
Use the back of a large spoon to make four deep wells in the sauce. Crack one egg into each well.
Cover tightly with plastic wrap and microwave on high until the egg whites are just set but the yolks remain runny, about two and a half minutes to three minutes.
Garnish with Parmesan cheese and fresh herbs if desired.
Heat up the Betty and pour the sauce into it.
Cook, with the cover open, for two to three minutes or until the sauce bubbles.
Use the back of a large spoon to make four deep wells in the sauce. Crack one egg into each well.
Cover and bake for two to three minutes until the whites are set and the yolk is still runny.
Garnish with Parmesan cheese and fresh herbs if desired.
Pour the sauce onto the toaster tray and make four wells (we used a spoon) for the eggs.
Carefully crack the eggs into the wells and bake for about 10 minutes at 375 degrees Fahrenheit – until the eggs are just set.
