Everyone needs a quick and easy dessert that can be made in a pinch, and this is definitely it! Be forewarned: These are gooey and fudgy and completely addictive. For some extra fun, try subbing out the peanut butter for your favorite nut butter or chocolate spread. The possibilities are endless.
1 cup (2 sticks) margarine
1 teaspoon Gefen Vanilla Extract
2 cups Gefen Confectioners’ Sugar
Combine margarine and peanut butter in a microwave safe bowl and cover with plastic wrap.
Microwave on high for two minutes, then mix, cover again, and microwave for an additional two minutes on high.
Add vanilla and confectioners’ sugar and mix to combine.
Spread evenly in an eight-inch baking pan and refrigerate for two hours, until completely set.
Slice and store in the refrigerator in an airtight container. Best served cold.
