5 to 6 ears fresh corn, husked
oil
3 tablespoons Gefen Mayonnaise
juice of 1 lime (or about 2 tablespoons Heaven & Earth Lime Juice)
1 cube Gefen Frozen Garlic
1/2 teaspoon Gefen Cumin
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
salt, to taste
pepper, to taste
1 red pepper, diced
1 jalapeño pepper, diced
1 red onion, diced
1/2 bunch fresh cilantro, cleaned and chopped
1/4 cup parve Parmesan (recipe below)
3/4 cup cashews
3 tablespoons nutritional yeast
3/4 teaspoon salt
1/4 teaspoon Gefen Garlic Powder
Brush the corn with oil and grill for two minutes per side until charred. Set aside to cool.
In a large bowl, stir together the mayo, lime juice, garlic cube, cumin, smoked paprika, chili powder, and salt.
Slice the corn off the cob and add to bowl along with red pepper, jalapeño pepper, red onion, cilantro and parve parmesan. Toss to combine. Top with a sprinkle of parve parmesan.
Combine all ingredients in the bowl of a food processor fitted with the S blade. Process until the mixture resembles coarse sand.
