Meatloaf is making a comeback! This recipe makes a super soft and tasty meatloaf. Pair it with mashed potatoes or this easy baked orzo. It goes right into the oven for an easy supper all will enjoy. For more great cooking, watch Supper, Again?
1 and 1/2 pounds ground meat
1 egg
1 cup bread crumbs, plain or seasoned
1/2 teaspoon salt
dash of black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon dried parsley
1/2 cup Gefen Honey BBQ Sauce, more for glaze
3/4 cup water or non-dairy milk, such as Gefen Almond Milk
3 tablespoons olive oil
2 bell peppers, diced
1 small onion, diced
1 teaspoon salt
3 cubes Dorot Gardens Basil
2 cubes Dorot Gardens Garlic
2 cups raw orzo, such as Gefen
4 cups water
Preheat oven to 400 degrees Fahrenheit.
Mix together all the meatloaf ingredients till combined. Try not to overmix.
Form into a loaf and spread some more BBQ sauce on top. Cover and bake 40 minutes. Uncover, add on more BBQ sauce if you’d like and then bake another 10 minutes.
Preheat oven to 400 degrees Fahrenheit.
In a 9×13 baking dish, mix together the oil, vegetables, salt, basil, and garlic.
Cook for about 10 minutes uncovered till the vegetables have softened a bit. Mix in the orzo and cover with water. Cover the pan tightly and bake about 30 minutes or until the orzo is soft. If there is liquid leftover in the pan, that’s fine.
Once you remove from oven, uncover and mix. Then cover back up and allow to sit a few minutes until the liquid is more absorbed.

Can I sub the orzo for white or brown rice instead using same grain: water ratio?
For sure you can sub the orzo for rice, and yes, the water: grain ratio stays the same.
So easy and yummy! Was finished to the last drop. Will definitely be making it again (& again).

i cook my orzo in a pot can I still put it in the oven the way you make it ?
am i putting breadcrumbs to stiffen it from the water? why not just skip both?
Both are in the recipe to enhance the flavor and texture of the meatloaf. Don’t skip either.
