Everything tastes better in miniature form, and meatloaf is no exception. For a fun twist on classic meatloaf, these meatloaf muffins are perfectly sized and portion-controlled. They are not only delicious but incredibly easy, making them the perfect family meal that everyone craves, even your pickiest eaters.
1/4 cup oil
1 medium Spanish onion, diced
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
1 small zucchini, peeled and grated
1/4 cup Glicks Ketchup
3 tablespoons Tonnelli Worcestershire Sauce
2 pounds ground beef
3/4 cup Gefen Panko Crumbs
1 tablespoon salt
1 teaspoon black pepper
Preheat oven to 350 degrees Fahrenheit.
Heat oil in a large skillet over medium heat. Add onions and saute until translucent.
Add garlic and zucchini and saute for an additional three minutes. Remove from heat, then add ketchup and Worcestershire sauce.
Add mixture to ground beef along with panko, salt and pepper. Mix well.
Coat muffin tin with cooking spray and fill each muffin cup with meat mixture.
Cook for 45 minutes, or until cooked through. For a crisp edge, remove from muffin tin, place onto baking sheet, and cook for an additional 15 minutes.
