Breakfast is always my most challenging meal on Passover… but this granola recipe has changed all that. It stays on the counter in a glass jar all Yom Tov long. Check with your rabbi which blessing to make on it.

Directions

Prepare the Granola

  1. Preheat oven to 275 degrees Fahrenheit (135 degrees Celsius).

  2. Place the matzo in a large bowl and crush into very small pieces.

  3. Add the honey, oil, nuts, coconut, and cinnamon, and mix well. Spread onto a lined baking sheet and bake for 45 minutes, stirring once during baking time.

  4. Remove from oven and let cool. Add raisins and/or chocolate chips. Enjoy!

Fantastic! Matzoh Granola is one of the the best things I’ve eaten. Just wait until you try it. Easy recipe, I doubled it for Passover so there was enough for a crowd. Also, I substituted walnuts for cashews (have you seen the cost of cashews these days?!). Try it, I promise you’ll love it.
