You’ve never experienced onions rings—or matzo balls— quite like this. Crispy, fluffy, and warm, Matzo Ball-Stuffed Onion Rings are the new snack/side dish/party favorite that you’re going to keep going back to! Watch the video.
1 box Lipton Matzo Ball Mix
1 tablespoon vegetable oil
2 eggs
1 large onion
1/2 cup Gefen Potato Starch
2 eggs, beaten
oil for frying
Combine one packet of matzo ball mix with two eggs and vegetable oil. Mix with a fork until well incorporated. Refrigerate for 15 minutes.
Slice onion into rings and separate.
Wet hands and press two to three tablespoons of the matzo ball mixture around the inside of each onion ring, creating a ring in the middle. Place on a cookie sheet in a single layer.
Freeze filled rings until solid or overnight.
Remove from freezer. Coat in starch, tapping lightly to remove excess. Then dip in egg and thoroughly coat the onion ring withthe second packet of matzo ball mix.
Deep fry at 380 degrees Fahrenheit for about four to five minutes until golden brown. Remove to cooling rack. Serve as is or with dipping sauce of choice.
