Marinated Vegetable Relish

Ingredients

Vegetables

  • 4 medium zucchini, sliced

  • 1 cauliflower

  • 1 green pepper, diced

  • 1 pint cherry tomatoes

Marinade

  • 3/4 cup vinegar

  • 1/2 cup oil

  • 1/4 cup sugar

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 bay leaf

Directions

Prepare the Marinated Vegetable Relish

1.

Blanch zucchini, drain.

2.

Divide cauliflower into florets.

3.

Combine all vegetables.

4.

Combine ingredients for marinade. Pour over vegetables. Marinate for 24 hours.
