This gorgeous medley of vegetables marinated in a great combination of flavours is a wonderful side dish to any meal. Make sure to allow the veggies to sit in the marinade for 24 hours so they really absorb the flavors.
4 medium zucchini, sliced
1 cauliflower
1 green pepper, diced
1 pint cherry tomatoes
3/4 cup vinegar
1/2 cup oil
1/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1 bay leaf
Blanch zucchini, drain.
Divide cauliflower into florets.
Combine all vegetables.
Combine ingredients for marinade. Pour over vegetables. Marinate for 24 hours.
