This salad is such a unique blend of flavors. Feel free to play around with your favorite spices and herbs for the delicious marinade.
4 ounces fresh mozzarella, diced
1/3 cup Gefen Olive Oil
1 tablespoon Gefen White Vinegar
1 cube Gefen Frozen GarlicĀ
1 teaspoon parsley
1 teaspoon red pepper flakes
1/2 teaspoon black pepper
1/2 teaspoon salt
8 ounces baby spinach (or your favorite lettuce mix)
8 ounces cherry tomatoes, sliced
Marinate mozzarella cubes in oil, vinegar, and spices overnight in the fridge.
Place baby spinach in a serving bowl and top with sliced tomatoes and marinated mozzarella.
Add some of the extra marinade for extra flavor.
