These tangy grilled veggies are the perfect colorful side dish for any meal. Easy and quick to make using simple ingredients and fresh vegetables. Let the veggies marinate for a couple of hours, bake, and serve!
2 small yellow squash
1 eggplant
2 zucchini
2 tomatoes, cut into wedges
2 Spanish onions, sliced
1/2 cup oil
1/2 cup vinegar
1 teaspoon Gefen Garlic Powder
1/2 teaspoon Gefen Oregano
1/2 teaspoon salt
Mix all ingredients for marinade.
Wash squash and eggplant well. Cut into one-inch slices. Combine all vegetables.
Pour marinade over vegetables. Marinate for two to four hours (or overnight).
Place marinated vegetables onto baking sheet. Bake at 350 degrees Fahrenheit for 30 minutes. Can be served hot or cold.
