Marinated Cauliflower Salad

Ingredients

Main ingredients

  • 3 zucchini, unpeeled

  • 1 pint cherry tomatoes

  • 1 red pepper, cut in strips

  • 1 pound cauliflower florets, separated

Dressing

  • 3/4 cup vinegar (use gluten-free if needed)

  • 1/4 cup sugar

  • 1 teaspoon salt

Directions

Prepare the Marinated Cauliflower Salad

1.

Wash zucchini and cut into one-quarter-inch slices. Blanch and drain immediately.

2.

Toss all vegetables.

3.

Combine dressing ingredients and pour over vegetables.

4.

Marinate for 24 hours prior to serving.
