This salad is bursting with both flavor and color! This is a super simple salad to throw together with lots of fresh ingredients. Allow it time to marinate in order for the flavors to come together.
3 zucchini, unpeeled
1 pint cherry tomatoes
1 red pepper, cut in strips
1 pound cauliflower florets, separated
3/4 cup vinegar (use gluten-free if needed)
1/4 cup sugar
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Gefen Basil
Wash zucchini and cut into one-quarter-inch slices. Blanch and drain immediately.
Toss all vegetables.
Combine dressing ingredients and pour over vegetables.
Marinate for 24 hours prior to serving.
