As a registered dietician and nutritionist, my sister Tamar is always fooling around with veggies to come up with new and enticing ideas for her clients. This was her latest idea.
1 teaspoon Gefen Olive Oil
2 cloves garlic, crushed
1 Spanish onion, sliced thinly
2 large boxes of baby bella mushrooms, cleaned and sliced
1 teaspoon salt
dash of black pepper
1 and 1/2 – 2 tablespoons Tio Pepe or other sherry
Heat oil in a large skillet. Add the onion and sauté until translucent.
Add garlic and mushrooms. Let cook for 10 minutes, partially covered.
Add salt, pepper, and sherry. Let it simmer for another five minutes. Remove from heat. Serve hot or warm.
