Submitted by Shaindy W. My grandmother gave me this recipe years ago. When I asked her where it originated, she couldn’t remember. The pistachios are her addition, and the pasta is mine. It has become a staple in our house and we’ll never get bored of it! When my grandmother gives over a recipe her instructions are always the same. Baste, baste, baste! That’s the key to making this fish taste great.
1/2 box of whole wheat angel hair pasta cooked according to package instructions
2 salmon fillets
3/4 cup natural maple syrup
2 tablespoons honey
4 tablespoons soy sauce
5 cloves garlic, minced
2 scallions, chopped
1 teaspoon freshly ground black pepper
1/3 cup + 2 tablespoons pistachios, divided
In a bowl, whisk together maple syrup, honey, soy sauce, garlic, scallions and black pepper.
Pour half the sauce over salmon and let marinate for at least an hour, up to overnight.
Place oven on the broil setting.
Place salmon into a pan, broil for 9 minutes, basting every 3 minutes.
After 9 minutes sprinkle 2 tablespoons of pistachios over the salmon.
Turn the oven off and let the salmon sit in the hot oven for 5 minutes. Remove salmon from the oven.
In a small saucepan, bring remaining sauce to a boil.
Pour sauce and 1/3 cup of pistachios over the cooked pasta.
Serve salmon over a bed of pasta.
