I’m so happy to introduce to you this magical recipe that is not only so easy to make but is also much easier to digest. This latke combination has no flour at all, so it’s gluten-free! No eggs to bind, so it’s vegan! No oil for frying – it’s baked! Enjoy a healthier version of potato latkes that are so delicious and so very friendly for all eating types! If you are looking to have a big crowd, save time, energy and lots of extra unnecessary calories this holiday, this recipe is ideal! Ingredients

Latkes

  • 8 grated potatoes

  • 2 cooked potatoes, peeled and mashed

  • 2 onions sauteed in 2 tablespoons oil

  • salt, to taste

  • pepper, to taste

Garlic Dill Mayo Dipping Sauce

  • 1/2 cup of vegan mayo

  • 1/3 cup of chopped dill

  • 1 clove garlic, finely minced or 1 cube Gefen Frozen Garlic

  • squeeze of half of lemon

  • pinch black pepper

  • 1/2 teaspoon Himalayan pink salt, or to taste

Directions

Prepare the Latkes

1.

Cook two potatoes in water until soft. Drain the water and mash.

Combine all ingredients: grated potatoes, mashed potatoes, sauteed onions, salt, and pepper.

Arrange patties on an oiled Gefen Parchment Paper. Spray some oil on top and bake on 375 for 25 minutes, Flip once and bake for another 10-15 minutes.

4.

Sprinkle some salt and serve immediately!

Prepare the Dip

1.

Whisk everything together until combined. You can add more water or lemon to get it to the consistency that you’d like.

Delicious! Just like fried ones. And great for those of us avoiding frying for dietic reasons.

Delicious! A big hit!!
I baked the latkes 10 more minutes per side for more crispiness.
I also doubled the dip recipe, as I had a feeling it would go fast… And I was right!

Best baked latkes!! Crispy and delicious! Best baked latkes. You would think they were fried !
