Ingredients

Mac and Vegan Cheese

  • 1 pound (450-grams) Gefen Elbows, cooked according to package directions

  • 1 (6-ounce/170-gram) package beef fry

  • 3 tablespoons Gefen Pure Maple Syrup

  • 14 ounces (400 grams) raw cashews

  • 2 and 1/2 cups cold cashew milk

  • handful of ice cubes

  • 2–3 cloves garlic or 2–3 cubes Gefen Frozen Garlic

  • 1/3 cup nutritional yeast

  • 2 teaspoons turmeric

  • 1 teaspoon kosher salt

Directions

1.

Preheat oven to 425 degrees Fahrenheit (220 degrees Celsius).

Lay out slices of beef fry on a baking sheet. Do not overlap. Drizzle with maple syrup and bake for eight to 10 minutes.

3.

Refrigerate until cool. Chop into bits.

4.

Combine the rest of the ingredients in a high-powered blender and blend until smooth.

5.

Transfer sauce to a saucepan. Warm over low heat and pour over pasta. Top pasta with beef fry and serve immediately.
