A modern twist on bubby’s classic lemon bars.
1 cup flour or flour of your choice
3/4 cup confectionary sugar
1/2 cup Earth Balance margarine
1 cup sugar
2 tbs flour or cornstarch
1/2 tsp baking powder
3 well-beaten eggs
1/2 cup fresh lemon juice
Dried lavender
Mix flour, confectionary sugar and Earth Balance until a dough forms. Line 2 small square (4×4 inch) baking pans with parchment paper. Divide the dough and press into the pan, making sure the dough goes up an all 4 sides.
Bake at 350F for 15 minutes. Do not poke holes. Take out and cool.
Mix the sugar, cornstarch, baking powder, eggs and lemon juice. Mix well. Divide and pour into crusts.
Take a little bit of fresh lavender and sprinkle on top of the lemon mixture. Return to oven and bake for 25-30 min. Do not overbake.
