Using the light versions of cottage cheese and sour cream may render this cheese kugel a bit less solid, but it will nonetheless be delish … and a bit healthier.
12 ounces Manischewitz Medium Noodles
1 (16-ounce) container cottage cheese
1 (8-ounce) carton sour cream
5 eggs
1 vanilla sugar
1 cup sugar
1 tablespoon Mishpacha Flour
1/4 – 1/2 cup oil
1 cup Gefen Corn Flake Crumbs or crushed corn flakes
1/4 cup brown sugar
1 teaspoon Gefen Cinnamon
Cook noodles; drain. In large bowl, combine noodles with remaining kugel ingredients (not the topping). Mix well.
Combine topping ingredients and sprinkle over noodle mixture.
Bake in a 9 x 13-inch pan at 350 degrees Fahrenheit for about one hour or until top is golden.
